Pizza on the grill is one of my all-time favorite meals to cook and eat. The pizza has so much flavor, and it’s a fun, collaborative cooking experience.

There’s not much better than pizza on the grill on a beautiful, summers evening in my book. And it’s not difficult.

Here’s How

Begin by making a recipe of pizza dough, enough for two pizzas if you want to follow this recipe exactly. This is the one I use.

Let your dough rise the recommended amount of time, and you’re ready to begin!

Divide the dough in half, and spread each half out on a separate sheet of parchment paper.

Then melt 4 TBSP of butter in a small dish in the microwave. Add 4 tsp of minced garlic and mix.

Using a brush, spread the garlic-butter mixture across the top of both pizzas. Expect to use about 1/4 of your garlic butter on each.

Once this is done, it’s time to move to the grill!

An important key to making pizza on the grill is preparation. Once you begin, the process will go quickly.

Be sure you have:

  • Plenty of utensils for maneuvering and flipping the crust. We use a pizza paddle, but two spatulas will also work.
  • Your remaining garlic butter
  • Pizza sauce
  • Brush
  • Cheese and toppings
  • An extra set of hands standing by. This is a teamwork thing

When you’re ready to go, place the dough, parchment paper and all, on the grill.

Your objective is to allow the crust to stiffen and cook a bit so it will be easier to work with.

If you don’t have parchment paper, skip this step and place the crust across the grill grates as flat as you can, knowing your pizza will have some character!

Once the crust has stiffened a bit (for about one minute in a closed grill), work it off the parchment paper and straighten it out. Do not flip the dough. Discard the paper.

Allow the crust to cook until stiff. Then flip it over.

This is where the real excitement begins.

Your task: to top the pizza and allow the cheese to melt before the crust burns.

Set 1: Brush garlic butter on the crust. At this point the side facing up should be the side that does not yet have garlic butter.

Step 2: Dump some sauce on your crust and brush it out evenly.

Step 3: Sprinkle on the cheese

Step 4: Quickly add toppings and close the grill to encourage the cheese to melt quickly.

Within a minute or two, your pizza should be done!

As soon as the cheese is melted and crust feels firm, pull it off and enjoy!

Ingredients

  • 1 Pizza dough recipe
  • 4 tbsp butter
  • 4 tsp minced garlic
  • 1 can pizza sauce
  • 2-3 cups mozeralla cheese
  • Desired toppings (we used 3/4 lb ground sausage for our pizzas)

Instructions

    Inside:
  1. Begin by making a recipe of pizza dough, enough for as many pizzas as you plan to make. Let it rise the recommended amount of time, and you’re ready to begin!
  2. Spread the dough out on parchment paper.
  3. Melt 4 TBSP of butter in a small dish in the microwave. Add 4 tsp of minced garlic and mix.
  4. Using a brush, spread the butter mixture across the top of both pizzas. Expect to use about 1/4 of your mixture on each crust.
  5. Outside:
  6. Preheat the grill on medium-high
  7. Once preheated, place the dough, parchment paper and all, on the grill. I recommend doing one pizza at a time.
  8. Close the grill cover for about 1 minute
  9. When the dough has cooked enough to do so, maneuver it off the parchment paper without flipping it.
  10. Allow the crust to cook until stiff.
  11. Flip it over
  12. Brush garlic butter on the crust.
  13. Pour on the desired amount of pizza sauce and brush it out evenly.
  14. Sprinkle on the cheese
  15. Quickly add toppings and close the grill. This will encourage the cheese to melt quickly.
  16. Once the crust appears done and the cheese is melted pull it off the grill and repeat with your other crust.
  17. Enjoy!
